Ingredients
- 1 1/4 cup almond flour
- 1 tbsp coconut flour
- 1 1/2 tsp baking powder
- pinch of salt
- 2/3 cup coconut sugar
- 5 1/2 tbsp butter
- 1/2 tsp vanilla extract
- 1 egg
- 1/2 cup chocolate chips
Instructions
- Pre-heat oven to 325 degrees F.
- In a large mixing bowl beat the butter and coconut sugar until well combined.
- Add egg and vanilla extract to the bowl and mix.
- In a separate bowl mix the dry ingredients (almond flour, coconut flour, baking power and salt).
- Add the dry ingredients to the wet ingredients.
- Fold in chocolate chips.
- Place the cookie dough in the refrigerator for 30 minutes.
- Place scoops of cookie dough onto a baking sheet.
- Bake for 12 minutes
- Remove and cool for 25 minutes.
