Ingredients
- 1 cup almond flour
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1/4 cup coconut oil, melted
- 1/2 cup coconut sugar
- 3/4 cup mashed banana (about 2 bananas)
- 1 tsp vanilla extract
- 1 egg
- 1 1/2 cup rolled oats
- 1/3 cup chocolate chips
- 1/3 cup chopped walnuts
Instructions
- Preheat oven to 350 F.
- In a small bowl whisk the almond flour, baking soda, cinnamon, and salt.
- In a large bowl mix coconut oil and the coconut sugar; cream them together for a minute.
- Add the mashed banana and mix together.
- Add vanilla extract and the egg; mix together until it's well combined.
- Pour dry ingredients into the wet ingredients and stir them together until it's a smooth cookie dough batter.
- Slowly fold the chocolate chips and walnuts into the batter.
- Place the cookie dough into the refrigerator for 30 minutes.
- Scoop your dough and place them on a cookie sheet lined with parchment paper.
- Bake in the oven for 11-14 minutes.
- Let them cook and enjoy!
Honestly, this cookie recipe has all of my favorite ingredients; bananas, walnuts, oats and chocolate chips. It's an easy and delicious cookie.
